Olive, Artichoke, & Feta Turkey Burgers

One day, while gazing at a jar of marinated artichokes, a thought struck me: “I wonder if these would make a good addition to a turkey burger?” The result was beyond my expectations. The combination of marinated artichokes, kalamata olives, and feta cheese created a Greek-inspired delight that is perfect for a quick and easy week night dinner.

I ended up making a five good sized burgers, but four larger burger would also work well. In order to achieve that irresistible crispy exterior, I opted to pan-fry them using avocado oil. I highly recommend choosing an oil with a high smoke point for this method, and don’t forget to let the pan heat up nicely. The sizzling sound and the aroma that fill your kitchen will make your anticipation soar. If you prefer, you can also try cooking them in an air fryer for a healthier twist. Grilling may result in some olives and other flavorful bits getting lost, creating a bit of a mess.

I paired the burgers with a lightly dressed mixed green salad, oven-baked fries, and a side of tzatziki and feta. You can definitely get creative and enjoy on a toasted bun or lettuce wrap, depending on your preference.

Ingredients

  • 1 lb ground Turkey
  • ½ cup red onion, chopped
  • ½ cup kalamata olives, sliced
  • ½ cup feta, crumbled
  • ½ cup marinated artichokes, chopped
  • ⅓ cup Panko bread crumbs, use gluten-free if needed
  • 1 egg
  • 1-2 tbsp avocado oil, or other high-heat oil
  • 2 tbsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ½ tsp black pepper

Recipe Steps

  1. In a clean bowl, combine the ground turkey, red onion, kalamata olives, feta cheese, marinated artichokes, egg, Panko bread crumbs, dried oregano, garlic powder, onion powder, salt, and pepper. Mix everything together until all the ingredients are well combined.
  2. Shape the mixture into 4-5 patties, ensuring they are evenly sized.
  3. Heat a large pan over medium-high heat and allow it to get nice and hot. Add enough avocado oil to cover the bottom of the pan, Carefully add patties to the hot oiled pan, making sure not to overcrowd it. The patties should have some space between them. Depending on the size of your pan, you may need to cook the patties in batches.
  4. Cook the patties for approximately 6-7 minutes on each side, or until they are cooked through and nicely browned. Flip them carefully to ensure they hold their shape.
  5. Once cooked, remove the patties from the pan and serve them according to your preference. These burgers pair exceptionally well with tzatziki, feta cheese, red onion, avocado, and freshly sliced and salted tomato.
