Mini Berry Crumbles

Ingredients

Berry Filling

  • 1 cup fresh berries (raspberries, blackberries, and blueberries work well)
  • 1 tbsp flour
  • 1-2 tbsp sugar (1 for more tart, 2 will be more sweet)
  • ½ Lemon, zest and juice
  • ½ tsp Vanilla extract
  • ¼ tsp Nutmeg
  • Pinch of salt

Crumb Topping

  • ¼ cup oats
  • 2 tbsp flour
  • 1 tbsp sugar
  • 2 tbsp butter, cold
  • ½ tsp Cinnamon

Recipe Steps

  1. Preheat oven to 350°F.
  2. Take a small bowl and mix all the ingredients for the berry filling until the berries are nicely coated. Now, it’s time to divide this berry mixture evenly between two ramekins.
  3. Next, grab another bowl and toss in all the ingredients for the crumbly topping except for the butter. Once combined, cut up the butter into little pieces and add them to the oat mixture. Using either a fork or your fingers, work the butter into the mixture until it forms lovely crumbly chunks.
  4. Pop your berry crumbles into the oven and bake for 30 minutes until the tops are golden brown and the berries are all bubbly and delicious-looking. You can either savor them alone or kick it up a notch with a scoop of creamy vanilla ice cream. Bon appetit!
