Ingredients:
For the Burgers:
- 1 lb Ground turkey
- 4 whole grain burger buns (or whole grain english muffins)
- ¼ cup + 2 tbsp Gochugang
- ¼ cup Scallions
- 1 inch Ginger, grated
- 4 cloves Garlic, crushed
- 2 tbsp mayo
- 2 tbsp oil, for cooking
- 1 tbsp Soy sauce
- 1 tbsp Sesame Oil
- 1 inch Ginger, grated
- 4 cloves Garlic
For the Slaw:
- 1.5 cups Cabbage, shredded
- ½ cup red onion, diced
- 2 Carrots, shredded
- 2 tbsp Rice wine vinegar
- 1 tsp soy sauce
- 1 tsp honey
- ½ lime, juiced
- Pinch of red pepper flakes
Recipe Steps:
For the slaw dressing, mix together rice wine vinegar, 1 tsp of soy sauce, 1 tsp of honey, lime juice, and a pinch of red pepper flakes. In a separate bowl, toss together shredded cabbage, grated carrots, and red onion. Pour the dressing over the vegetables and mix until evenly coated. Set aside.
To make the burgers, in another bowl, combine 1 lb of ground turkey with 1/4 cup of gochujang, chopped scallions, 1 tbsp of soy sauce, 1 tbsp of sesame oil, grated ginger, and minced garlic. Mix well and shape into 4 patties.
Heat a large skillet or cast iron pan over medium heat and add oil. Once hot, add the patties and cook for 6 minutes on each side, or until fully cooked. Reduce heat to low, cover the pan, and let the burgers cook for an additional 4-5 minutes.
While the burgers are cooking, lightly toast the buns. In a small bowl, mix together 2 tbsp of gochujang and mayo. Spread the mixture on the toasted buns. Assemble the burgers by placing a patty on each bun, and topping with the slaw mixture. Enjoy!
