Bacon and Brie Toast

I discovered the inspiration for this recipe while in Dublin, Ireland and was blown away by the delicious pairing of bacon and brie. I couldn’t resist recreating it with my own twist by adding caramelized onions for added sweetness and flavor. I suggest serving it on a hearty whole grain toast to boost fiber and nutrient content.

Ingredients

1-2 slices of your favorite whole grain bread
1 small red onion, thinly sliced
2-3 slices of cooked bacon
1 oz brie cheese
1 tbsp balsamic vinegar
2 tsp oil
1 tsp brown sugar
Pinch of salt

Recipe Steps

  1. Heat oil in a medium sauté pan over medium-low heat.
  2. Add the sliced onions and sauté for 3-4 minutes until they soften.
  3. Stir in the balsamic vinegar, brown sugar, and salt into the onions and continue cooking for 8-10 minutes, stirring often, until the onions are caramelized.
  4. Toast the bread to your preference.
  5. Top each slice of toast with Brie cheese, cooked bacon, and caramelized onions. Serve and enjoy!
